Soup That Worked

I didn’t spend any time at all making dinner tonight. Sunday, I had boiled a chicken, and Greg had deboned it. The broth was easy to defat. I boiled the broth with bits of chopped up chicken, about a cup of frozen spinach and a package of cheese tortellini for about seven minutes. Then I sprinkled some Parmesan cheese on top and served it. I meant to serve it with breadsticks or garlic bread, but I forgot. Next time.
The chicken was a good deal, since I also used it for Tuesday’s Chef Salads, and in lunch salads for work.
Yeah, this is mundane, but I don’t want to forget that something I made turned out good enough to make again…
